Spinach Tortellini Soup recipe

Spinach Tortellini Soup
3/4 cup chopped onion
1 teaspoon minced garlic
1 tablespoon olive oil
2 cans (14 oz.) chicken broth
2 cups water
1 teaspoon sugar or equal
1/4 teaspoon salt
1/4 teaspoon pepper
1 small package of your favorite tortellini -we like mushroom(about $2.50 a pkg. frozen)
1 can (15 oz.) diced tomatoes, undrained
1/2 package (8 oz.) frozen chopped spinach, thawed - or 1 bunch fresh, washed and chopped
Directions:
In a large saucepan, saute onion and garlic in oil until tender. Add the broth, water, sugar, salt and pepper. Bring to a boil. Add tortellini; cook for 7-9 minutes or until tender, stirring occasionally. Reduce heat. Stir in tomatoes and spinach; cook on low for 10 minutes, or until well heated.
Makes 2 quarts of soup.
